[1] It is true that you can stab through mail if you have the right tool for the job. It is not necessarily easy, though, given that your opponent is moving, causing the rings to shift to and fro. Obviously stabbing somebody wearing mail is the way to go if you have to fight with your sidearm, but we shouldn’t make the mistake of thinking that stabbing means a mail-armored man might as well be wearing nothing. It still defends against thrusts.
The other thing mail is, or at least that mail can become, is really, really tailored. This is not what high medieval “knightly” mail looks like: I’ve only seen a really good reproduction knightly mail harness once, and unfortunately I can’t find pictures of it, so I had to use a manuscript image here. [EDIT: Ah, here we go: [/EDIT]But the big difference to notice between the two pictures is that one of these men looks like he’s wearing a burlap sack made of steel, and the other looks like he’s wearing a metal skin. You can even see the definition in the muscles. A knight in that kind of armor weighs more than he’s used to, but his armor doesn’t really get in his way at all. You know how people say that armor doesn’t impede your movement? Well … that’s only sort of true. Pretty much no armor will impede your movement to the point that your ability to fight is seriously degraded. But most armor does impede your movement a little bit. Good knightly mail does not. Good knightly mail is like being Colossus.
So the answer to “why didn’t people just make plate armor?” is that they literally couldn’t. If you teleported a 14th century harness back to ancient Greece or Rome (let alone something really advanced, like a 16th century harness), showed it to the armorsmiths of the day, and said, “Okay, let’s reproduce this baby and change history!” they would say, “Um … how?” The bottleneck is not figuring out how to make armor that fits the human body. The bottleneck is working with the materials science of the era. But then there’s the question of mail itself. How come lorica segmentata didn’t become the armor of choice for Europe, whereas mail did? Heck, as you probably know, mail become the armor of choice of Rome: Well, first off, mail is really, really good. Roleplaying games sometimes distort this perspective. I think most RPGs give the impression that mail is about half as good as plate armor. This is … questionable. I mean, the whole idea of trying to reduce real-world weapons and armor to “stats” is questionable, but I think it tends to give people the wrong idea. Mail armor is really good. It makes you basically immune to all sidearms[1], and offers excellent protection against even primary weapons. Don’t think of it as half as good as plate. Think of it as, say, 80% as good.[2]
